Smoked Vegetables

There are a lot of different things you can cook as a side dish to pair with your smoked meats, but this recipe is one of my favorite. Smoked Vegetables are simple to make and only take a short time to cook.

Ingredients

  • 4 carrots
  • 1 head broccoli
  • 1 red bell pepper sliced
  • 1 cup chopped mushrooms
  • 1 tbsp olive oil
  • 1 ½ tsp salt
  • ½ tsp pepper
  • 1 tsp garlic powder

Instructions

  • Cut your carrots and broccoli into bite-sized pieces and combine with the bell pepper slices and mushrooms.
  • Toss veggies with the olive oil, and seasonings.
  • Cover a sheet pan with parchment paper, and place the veggies on top.
  • Set up your smoker to smoke at 180-200 degrees F.
  • Put the baking sheet with veggies in your smoker and smoke for 15 minutes.
  • Give everything a stir, close the lid and adjust the temperature up to 400 degrees F.
  • Continue to cook the vegetables for an additional 10-15 minutes or until the broccoli tips start to lightly brown and you reach your desired tenderness.

Notes

The vegetables I used in this recipe can be adjusted to your taste. Consider this a baseline for what's possible, and expand on it!
Vegetables cooked this way tend to be a little crisper than some people like. You can cook the vegetables in a foil pack with butter instead if you like your veggies to be a little less firm.
