Smoked Cherry Chicken Salad

This Smoked Chicken Salad is a flavorful dish that combines smoky barbecued chicken, with the sweetness of dried cherries, and the added crunch of almonds and celery.

Ingredients

  • 1 ½ - 2 lbs Boneless Chicken Breasts
  • 1 ½ tbsp Chicken BBQ Rub (I used Goldstar)
  • 2 green onions chopped
  • ¾ - 1 tsp paprika (depending on yourpreference)
  • ¼ cup white onion chopped
  • 2 stalks celery diced
  • ¼ cup sliced almonds
  • ½ cup dried cherries
  • 1 cup Whipped Dressing (Miracle Whip or similar)

Instructions

  • Preheat your smoker to 225 degrees F.
  • Prepare your chicken breasts by cutting off and removing any unwanted parts.
  • Season both sides of the chicken breasts with the BBQ rub and rub it in.

  • Transfer out to the smoker and place the chicken directly on the grates.

  • Close the lid and let smoke for about 2-3 hours until the internal temperature reaches 165 degrees F. This time will vary depending on the thickness of the chicken breasts.

  • Once cooked through, bring the chicken in and shred.

  • In a large bowl combine the shredded chicken, onions, paprika, celery, almonds, dried cherries, and the dressing

  • Stir it all around until well combined.

  • Cover and refrigerate until ready to serve.
