Smoked Zucchini with Sliced Onions

Fresh zucchini sliced and tossed in a mixture of olive oil, sweet onions, and fragrant seasonings, then smoked to flavorful perfection in a cast-iron skillet.

Ingredients

  • 2-3 zucchini small
  • 2 tbsp olive oil
  • ½ cup onion sliced
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • ½ tsp smoked spanish paprika
  • 1 clove garlic minced

Instructions

  • Preheat the smoker to 200 degrees.
  • Using a sharp knife, cut the zucchini into slices.

  • Place the zucchini in a large mixing bowl. Add in the sliced onion, olive oil, garlic, and seasonings.

  • Stir until all the zucchini is coated.

  • Pour into a cast-iron skillet.

  • Place the pan into the smoker and let smoke for 1 hour and 15 minutes or until desired tenderness.
