Combine the ingredients in a large bowl and mix until egg has incorporated into the other ingredients.
Set up the bbq to cook at 350 degrees
Create 12 equally sized balls out of the peanut butter mixture and place them on a butcher paper or parchment paper lined baking sheet.
Flatten each ball using a fork.
Place the cookie sheet in your smoker and let the cookies cook for 12-15 minutes. Cookies are done when edges of the cookie have just barely set.
Remove cookies from the smoker and let them rest for 15 minutes on the cookie sheet before eating.

Letting the cookies rest is a crucial step. They will fall apart if you try to eat them prior.I used natural peanut butter in this recipe - if you use Jif or another conventional brand I'd recommend just using one egg and don't add the extra egg white.If you're making more than one batch, resist the urge to cook more than one pan in your smoker at a time - they'll burn.
