Smoked Huckleberry Cobbler Recipe

I really love a good cobbler, and this huckleberry cobbler is one of the best I've ever had. What I really love about this cobbler, is how easy it is to make! It only requires a handful of ingredients, most of which you should have at home. The only ingredient you might not have, are huckleberries, and you can get Huckleberries at Albertson's on Broadway now until August 28th.

Ingredients

Huckleberry Filling

  • 6 cups fresh huckleberries
  • 1 cup brown sugar
  • 1 tsp salt
  • The Juice of 1 lemon
  • 2 tbsp cornstarch

Biscuits

  • 8 tbsp butter cold, cubed
  • 1.5 cups flour
  • 1.3 tbsp plus one teaspoon of baking powder
  • a dash of salt
  • 2 tbsp milk approximate

Topping

  • 2 tbsp white sugar

Instructions

  • Mix all of the huckleberry filling ingredients together thoroughly, and then set aside.
  • In a large bowl combine all of the dry biscuit ingredients with the butter
  • Add a splash of milk and mix some more, and then another splash. Add just enough that all of the flour in the bowl has been picked up, but not so much that the dough is wet.
  • Toss your huckleberries one more time, and then pour them into a 12" cast iron skillet.
  • start dropping small clumps of the biscuit dough on top of the huckleberry filling
  • Sprinkle two tablespoons of sugar over top
  • Get your smoker cranking to 375 degrees and cook the cobbler for approximately 40 minutes. The biscuits should start to turn golden brown, and the filling will be nice and bubbly!
  • Let it rest for about 15 minutes. This allows the cobbler to cool down, and the huckleberry filling should thicken a little too.
  • After it's rested, spoon some cobbler in a bowl, add one or two scoops of ice cream, and dig in!
