Ingredients
- 2-3 zucchini small
- 2 tbsp olive oil
- ½ cup onion sliced
- ½ tsp salt
- ½ tsp pepper
- ½ tsp garlic powder
- ½ tsp smoked spanish paprika

- Preheat the smoker to 200 degrees.

Slicing the zucchinis in rounds is a bad idea as they stick together and are hard to get coated with the oil and spices and do not cook thoroughly when stuck together. So unless you like partially raw/seasoned squash I'd Julianne it into 1 inch pieces and jack the temp up to 250 F or sauté them up on the stove after smoking.
