Sometimes the tastiest meals, are the most simple. I recently had the chance to try an artisan olive oil from Secolari. The first thing I made with it was Grilled Lemon Chicken. This chicken is easy to prepare and only takes an hour to cook on the grill.

For this grilled lemon chicken recipe I used their lemon olive oil and was blown away by the clean and fresh flavor that it brought to my tastebuds. How to Make Grilled Lemon Chicken
To make grilled lemon chicken you just need a few ingredients.
- 1 whole organic chicken
- a few tablespoons of Secolari Lemon Olive Oil
- Salt and Pepper
- 1 Lemon
When you’re ready to cook line a baking sheet with butcher paper. Remove the innards from the chicken and save for stock.

Spatchcock the Chicken (Butterfly)
Using a pair of sharp kitchen shears remove the spine from the bird. Then, using your thumbs, press on the breast of the bird to lay it flat. Flip the bird over so you can see the underside of it, and brush a tablespoon of the Secolari Lemon Olive Oil all over. Sprinkle some salt and pepper on it, and then flip the bird back over.
I like grilling chicken this way because it cooks much faster, and much more evenly than cooking the whole bird uncut.
Slice the lemon into 4 or 5 slices and place the butterflied chicken meat side down on top of the lemon slices in the baking sheet.
Use your fingers to carefully remove the skin from the thighs and breast of the chicken. Rub some of the Secolari Lemon Olive Oil under the skin, and do your best to sprinkle some salt and pepper under the skin as well.
Put the skin back in place and brush it with more of the Secolari Lemon Olive Oil, and then sprinkle with salt and pepper or your favorite bbq rub. I discard the skin when I’m done cooking the chicken, but it helps keep the moisture in the bird while it’s cooking.

Grilled Lemon Chicken – How to Cook It
Once you’ve prepped the chicken set up your grill to cook at 400 degrees using indirect heat. Place the baking sheet in your smoker and let the chicken cook for approximately 60 minutes. It’s done when the internal temperature hits 165 degrees in both the thigh and the breast.

I really enjoy making this grilled lemon chicken recipe. Using Secolari Lemon Olive Oil in the recipe allows me to keep it super simple, and the flavor profile when it’s done cooking is out of this world!

Grilled Lemon Chicken

Ingredients
- 1 Whole Chicken
- 1 Lemon (sliced)
- 2-3 Tbsp Secolari Lemon Olive Oil
- 1 tsp kosher salt
- 1 tsp ground black pepper
Instructions
- Spatchcock the chicken by removing the spine with kitchen shears and then flattening out.
- Brush the underside of the chicken with olive oil.
- Season with salt and pepper and then flip the bird over. Place on top of the slices of lemon in a butcher paper-lined baking sheet.
- Use your fingers to get under the skin of the chicken. rub some olive oil under the skin on the breasts and thighs of the bird.
- Brush the outer skin with more olive oil, and the seasoning of your choice.
- Grill the chicken at 400 degrees for approximately 60 minutes.
- The chicken is done when the internal temperature hits 165 degrees in the breast and thigh.
